Chi-Chi’s Mexican restaurants making a comeback with their first location in Minnesota this year


After being absent for about 20 years, Chi-Chi’s, a Mexican restaurant chain with roots in Minnesota, is set to make a comeback. The founder’s son, Michael McDermott, has announced plans to relaunch the brand with the first location scheduled for St. Louis Park this year. The revival is made possible through a crowdfunding initiative and a new agreement with Hormel Foods, which owns the restaurant’s trademarks. The first location will be converted from a Rojo Mexican Grill into Chi-Chi’s.

Chi-Chi’s was founded in 1975, with its first location opening in 1976. At its peak, there were over 200 locations across the nation. Unfortunately, the franchise faced bankruptcy and a hepatitis A outbreak in 2004, leading to its demise. Now, with new ownership and strategic plans in place, Chi-Chi’s hopes to regain its popularity and success in the competitive restaurant industry. Stay tuned for the official opening date of the St. Louis Park location and further expansion of the chain.
