Chi-Chi’s, the beloved Mexican casual dining chain that disappeared two decades ago after a hepatitis A outbreak, is making a comeback with its first Minnesota location set to open in St. Louis Park. Michael McDermott, son of the chain’s original cofounder, plans to convert his Rojo restaurant into a Chi-Chi’s. The opening date was not provided but the release indicated it is scheduled to open this year. McDermott also plans to turn the Rojo restaurant in Maple Grove into a Chi-Chi’s.
The chain, known for its fresh tortillas, sizzling fajitas, margaritas, and deep-fried ice cream, has not been in operation for 20 years. However, McDermott believes the brand still holds a special place in consumers’ hearts and is popular nationwide with its packaged salsa, tortillas, and seasonings. Despite the past outbreak, Chi-Chi’s aims to offer a “modern and lively atmosphere” while continuing to provide high-quality, value-driven meals that made the chain popular. McDermott is looking to raise $3.5 million through crowdfunding to support the revival of Chi-Chi’s.
